How Do You Make Vegan No-Bake Cookies?
The best thing about this vegan no-bake cookie recipe, besides not having to cook, is how fast and simple it all comes together.
First, add the oats to a food processor and blend until you get a somewhat coarse flour. Then add your dates and blend them with the oats until they get chopped into little bits.

Now just toss in the peanut butter, vanilla, unsweetened cocoa powder, maple syrup, almond milk, and process until this awesome cookie dough is formed.

Delicious Vegan No-Bake Cookies with chocolate and peanut butter! Easy to make and perfect for a quick and healthy snack. Made with just 7 simple ingredients.

Ingredients
Scale
- 1 cup old-fashioned rolled oats
- 1 cup pitted dates
- ¾ cup natural peanut butter or nut butter of choice
- 2 Tbsp. unsweetened almond milk
- 1 Tbsp. maple syrup
- 1 Tbsp. cocoa powder
- 1 tsp. vanilla
- ½ tsp. salt
Instructions
- Line a small baking sheet with parchment paper.
- Pour oats into a food processor and blend until it looks like a “coarse” flour.
- Add the dates and salt then blend for 30-45 seconds or until the dates are finely chopped.
- Add the peanut butter, maple syrup, almond milk, vanilla, and blend until it turns into a cookie dough.
- Scoop out about 2 Tbsp. of dough and form into a small cookie and set on the baking sheet.
- Enjoy immediately or let chill in the fridge until you’re ready to serve.

I have made these at least 10 times now. they are my go to snack. I find if I have two of these I don’t crave other sweets like candy. I use almond butter instead of peanut butter as my daughter is allergic to peanut butter. My whole family likes them. I don’t use instagram so no picture. Thanks for a great recipe!

I have made these 4 times now. they have become my favorite healthy treat. I limit myself to two a day. My husband and daughter like them as well.
I made them with almond butter instead of peanut butter due to my daughter’s peanut allergy. I use a small cookie scoop and find I like them just as well left in a ball shape although I have flattened them as well.Reply

Equal amounts. 1 cup of oats will give you 1 cup of oat flour. Hope this helps!

These are so yummy! Mine did not stay together as well as they look like they do in the picture. I did not alter any of the recipe. Any thoughts? I will say I wasn’t sure how much a cup of dates was so I cut each date in half and added it in the one cup until it looked like it was full. But maybe I underestimated?Reply

A Very Expensive Recipe 😂
I love these! I didn’t own a food processor, so I made them in my trusty Blendtec. They were delicious, but they weren’t as smooth and really my Blendtec wasn’t meant for this task. So I finally splurged and bought a high end food processor! So happy I did – but I joke and say it was all because of these cookies. They ARE smoother and much quicker with the right equipment! Tonight we had a Shane & Simple night. Your chick pea, cauliflower and rice casserole and no bake cookies! Yum!

Shane – although it’s listed in the ingredients list, the cocoa powder isn’t listed in the instructions when adding ingredients to the food processor.

I cannot emphasize enough to make sure you have pitted the dates. I usually buy pitted dates, but not this time. I accidentally made these cookies with pits! Never occurred to me to check the dates first, as I was in a hurry! Anyway, i am still eating these cookies, just spitting out the tiny pit pieces, lol! Soo, soo good!

I had to come back and add: I stored mine in the freezer for a ready supply. These are great from frozen with 5 min so or so in the air fryer. Still squidgy in the middle but also warm and firm on the outside. MMmmmmmm

Can you use date “sugar” instead of grinding the dates? I have a wimpy food processor. Any idea on amount?

Hi, Rachelle! The dates are what hold the cookies together. So, I’m not sure there would be enough binding if the dates were to be removed. You could try doubling the maply syrup and that might help. Good luck!

Fantastic, Shane. Thank you for this recipe. I made two small changes….I don’t like raw oats, so I baked them gently for about 8 minutes. Before I put them in the oven, I put a dab of cherry jam (all fruit) in the center of each one. They were outstanding.
